- Pearl Mayfair (London): Chef Lisa Goodwin-Allen is overseeing the opening of this new restaurant from The Beaumont Mayfair at Brown Hart Gardens – one of London’s most unexpected settings. Taking bookings for tables from mid-September, Pearl will offer all-day Mediterranean-inspired dining from 8am. Think octopus with nduja aioli, lamb chops with sumac, tzatziki and dill, and burrata with grilled peppers, artichokes and hazelnuts.
- MOR (Cornwall): Chef Tom Sellars has recently opened MOR at Carbis Bay. Taking its name from the Cornish word for sea, the restaurant is shaped by its coastal surroundings, anchored by a raw bar (where guests can choose their own fish and see the catch of the day) and charcoal grill cooking. Dishes so far have included smoked Mora Farm tomatoes with chilled dashi, shell-baked ‘one breath’ scallop with roasted chilli paste and salted butter, and oven-baked crisp seafood riced with Coombeshead Farm charcuterie and rouille.
- Lomri (Surrey): Foxhills Country Club in Surrey has just unveiled this, its new signature restaurant, led by chef Achal Aggarwal, whose career so far has taken him to Delhi, Toyko and New York. Lomri is inspired by the spice ports of India, translated into refined dining. Dishes include Wagyu beef pepper fry, muntjac laal maas and aloo tikki chaat.

Don’t wash them – the coating protects the flesh inside. After picking, remove any damaged or bruised apples and wrap each one in plain paper or cardboard – the skins mustn't touch. Place in trays in single layers, and store somewhere dark and cool. Check every fortnight and remove any that are going soft.
